Use either 205/50 or 225/45 tires. I prefer the Hankook RS2 over the Falken Azenis for street/track/autocross dual duty.

Should I get 7.5" or 8"?

8" will work better on the Miata, no question. If your car (not Miata) has a strut type suspension, you may need spacers or fender rolling to fit them. 7.5's are an options for strut type suspensions or those with limited tire clearance or those limited by racing class rules to 7.5" width.
